DirectionsStep1Heat oil in a pan or a kadai.Step2Fry all ingredients for the masala by adding them one by one(or each separately) till they lose their raw flavor.Step3Grind them to a fine paste.Step4Boil red gram and mash.Step5Add vegetables (except tomato) along with turmeric powder, salt and allow to boil till vegetables are cooked.Step6Soak tamarind in 1/4 cup water and squeeze out the juice and add this to the boiling vegetables.Step7Add cut tomatoes and allow it to boil.Step8Add the ground masala and boil.Step9Heat oil in another small frying pan.Step10Splutter mustard seeds, fenugreek seeds, red chillies and curry leaves.Step11Pour the above seasoning into the sambar.Step12Garnish with coriander leaves.Step13:- Serve with rice, dosas or idlisExplore further
